Creamy Mushroom with Brown Rice Noodles
2 packages of GloryLand Brown Rice Noodles
2 tablespoon of butter
1 tablespoon of olive oil
10 oz of crimini or white button mushrooms
2 garlic cloves, chopped
½ cup of white wine
½ cup of Chicken or Vegetable stock
¾ths cup of cream
½ cup of parmesan
salt to taste
pepper to taste
Melt butter and oil in the skillet over high heat. Add mushrooms to cook and stir regularly. Add salt and pepper to taste. Cook for 4 minutes and add garlic, cook for another minute.
Add wine and simmer for a few minutes until the wine cooks down. Add broth, cream, parmesan and stir to dissolve parmesan and simmer for 2 minutes.
Prepare the noodles according to package instructions. Toss noodles into the sauce, salt and pepper to taste. Garnish with parsley and serve with more parmesan.
