Black Rice Carbonara
2 packages of Gloryland Royal Black Rice Noodles
2 tablespoon of olive oil
3-4 table spoon fresh grated parmesan cheese
2 large eggs at room temperature
hot pepper flakes to taste
salt to taste
pepper to taste
In a large frying pan add in oil, pancetta, and hot pepper flakes. Cook on medium heat until pancetta is cooked for 4 minutes. Turn heat off once pancetta is cooked.
Prepare the noodles according the package instruction, strain but save some of the noodle water. In a small bowl add eggs and parmesan and mix very well. When noodles is cooked add to pancetta mixture and turn back heat to medium high. Combine well for 30 seconds and add egg mixture. Toss together on low heat and add a tablespoon of the starchy noodle water until the carbonara is creamy.
Salt and pepper to taste. Top with parmesan cheese if desired. Serve and enjoy.
